Dry wine is simply the opposite of sweet. When grapes are allowed to ferment completely, without halting the process to preserve sweetness, all of the sugar is converted to alcohol. The amount of alcohol produced determines a wine’s dryness.

Your perception of dryness depends on the balance of alcohol, acidity and tannins. Acid is a crisp, tart taste often associated with white wines, and tannins add a bitter pucker from grape skins and seeds.
